Handbrake (Win/OS X/Linux)
Handbrake is a free, very simple program, with many great features. It will select recommended settings for whatever device you want to put the video on, if you are not too familiar with encoding. Handbrake is great in conjunction with other programs.
DVDShrink is a favorite ripping, decrypting, and compressing utility. Although it hasnt been updated since 2005 it can still handle many discs just fine. DVDShrink is well known for making its files very small and therefor very portable. Its completely free and very easy to use.
